Yep, got the casserole done and it's now baking away in the oven. It needs to bake for 20 minutes covered, then remove cover (foil) to brown for about 10 minutes and it should be ready to go.
This morning when I got out the stuff to be one, get the cheese softened, and two, to have everything ready to go so it's just a matter of creaming and then assembling. I had been looking for the GOOD copy of the recipe that I knew I had typed up but wasn't finding so went off a poor handwritten copy I found. Well, whaddayaknow, I found the GOOD copy and discovered I needed CREAM, not lemon juice! So made a quick and hasty trip to the store, and decided to get package of frozen spinach, this time in a 12Oz bag to ensure I had plenty of it, and it does say to nuke in the microwave so I put it in a bowl, loosely covered with plastic wrap and nuked it for 7 minutes while I got the artichokes drained and cut in half and lining the casserole dish. Got the cream cheese creamed with the cream and began to assemble.
I had noted earlier that the spinach I cooked last night needed more straining, so got a sack cloth towel that is perfect for this kind of task, and squeezed out a good bit more of the liquid so it would be ready for assembly.
Anyway, once the artichokes have been placed in the baking dish, pour 4 tablespoons of melted butter, salt/pepper and then layer the spinach by spreading it out as much as possible. With that extra package, it made all the difference, then spread the cheese mixture over the top and sprinked it with parm cheese.
Got most of the kitchen cleaned up so that's good, showered and am partly dressed. Gotta put my tie on and my sweater and finish packing my overnight bag and then get the basket and towel ready to accept the hot dish, cover and then I'll be ready to go.
I'll be in Olympia for the day, staying overnight at my best friend's place in Tacoma, about halfway between my sisters and here.
Will be home tomorrow and I'll be baking cookies at least part of the weekend. Rain is forecast and many rivers are expected to flood, if they haven't already due to runoff from the mountains. Right now, it's in the upper 50's, but is expected to get colder as we get into tomorrow night and maybe some light snow in the lowlands.
In any event, gotta go deal with the casserole and finish getting myself out the door.
