This is baked fusilli arrabbiata with everything: garlic, green and red chilis, tomatoes, mushrooms, butternut squash, broccoli, carrots, raisins, spinach, vegan salami, black olives, and cilantro. I was trying to use up everything in my fridge. It's vegan ~ that's not dairy cheese.



I sauteed garlic, green and red chilis, tomatoes, mushrooms, butternut squash, broccoli, carrots, raisins, spinach, vegan salami, black olives, and cilantro in olive oil.



Then I stirred in tricolor fusilli and canned corn.



Mixed it in a baking dish with Daiya vegan peppper jack 'cheese' (made from arrowroot), then covered it with more Daiya pepper jack. Baked it at 350F/175C for 40 minutes. Then I garnished with more cilantro. It was the best thing I have ever made.



I'm having this as I write this entry. Huge handful of spinach, a pear, soy milk, almond butter, spirulina, and ice. This and a plum were "breakfast." It's 2330 and I have to get ready for work.



This is a vegan apple crisp I made on Thanksgiving, reading about all the food you internet people were cooking. Four apples, fresh lemon juice, sugar, salt, cinnamon, nutmeg, cloves, cardamom, walnuts, almond butter, and Grape Nuts.



Not the best picture, but this is fried rice I took to work the other night. Edamame, mushrooms, butternut squash, broccoli, red chilis, onions, and lots of garlic. I cooked it with Braggs.



Another not-great picture. This is what I'm taking to work tonight: couscous with lemon juice, olive oil, oregano, salt and pepper, tomatoes, and cucumber. I normally use fresh mint, but I don't have any. However, there will be some at work I can steal and add to my lunch.



This is a 'peanut and coriander soup' I made from The Ultimate Book of Vegan Cooking. Not bad. The base is potato. I'm not sure I made it right, though.



These are nearly vegan! I realized later that I'd bought hot dog buns with milk powder. Both kinds of cheese are completely vegan ~ Daiya mozzarella shreds, and Vegan Gourmet cheedar. Spinach, broccoli, olives. And Tabasco.





Again, nearly vegan, due to milk powder in the bread. Yves vegan salami, Vegenaise, mustard, and spinach. Before assembling it, I sliced the roll and steamed it so it would be soft. More delicious than you think.
