The viral recipe swap going around right now specifies simple, top-of-the-head dishes, which I think is a disservice because recipients are so consumed with getting that thing out of their inbox and on its way to the next set of people that it discourages anything a little more involved. (Your milage may vary.)

I love pie with meat in.
The good thing about this is that it's entirely variable to taste -You're vegetarian? Omit the bacon. -You're not exactly sold on the taste of leeks yet? Maybe only use one. It's like all the best parts of quiche without second-guessing the done-ness of your eggs.
(Also, man, I've been saying for ages that I should post my favorite empanada recipe here and I keep forgetting. It follows in the general theme of 'Chronographia Loves Sweet/Sour Like A Fiend.')
