You know I get excited about this.
I'm preparing for my biggest baking adventure yet. 150 cupcakes, and then I decided to throw in an 8" layer cake for a centerpiece. The menu:
1. Strawberry lemonade cupcakes (got the idea from Lin, haha). Lemon cupcakes with a lemonade syrup and strawberry Swiss meringue buttercream. Not sure what the decoration will be.
2. USA cupcakes (aka vanilla). I'm going to do these layered with red, white, and blue, and top with a cherry Swiss meringue buttercream.
3. S'mores cupcakes. Chocolate cupcakes with a marshmallow buttercream, which I plan on toasting (got a mini blowtorch today!). I'm also toying with the idea of smushing a graham cracker crust in the bottom of the cups. Maybe a chocolate drizzle on top.
4. Butter pecan cake. It's a browned butter cake with pecans in it, and then a praline buttercream. I might make some fondant to roll over that.
I'm hoping if I keep baking mass amounts of things for family get-togethers that someday somebody's going to commission me or something. I need to start a business.
