Soft and Dark chocolate

Hello, new member, I love chocolate. Especially the high coaco content dark ones. Currently, I like eating this Valor 70% chocolate with mint thing.

The trouble is, I also like soft chocolate, but usually, a lot of soft chocolates are too sweet. So do anyone have any recipes to making truffles that aren't sweet? Currently, I have Baker's Chocolates. ...and how do I make chocolate milk with that? When I heat them together, the chocolate square just goes to little bits instead of melt. Do I have to add anything in there? Or is it method? When I melt the chocolate first, it hardens again when I pour milk on it, even a heated glass, maybe I didn't heat it enough.
