In order to color hardboiled eggs, you can either buy a kit (in the US, the most well known kits are made by brand called Paas, but there are more out there) or use a combination of food coloring, water and vinegar.

You can also use white wax or a white crayon to make markings on the eggs, neither of which take the dye, and that will leave neat patterns on your eggs. There are also a number of other techniques that can be used to really make colored eggs unique, and I found a website for you (and anyone else who may be interested in learning more about dyed eggs) here: http://www.amazingmoms.com/htm/holiday_eastereggs.htm

(PS - I added you after you posted the wonderful pictures of your trip to Japan in the foodporn community. I find your journal fun and quite interesting, plus, I lived in Germany for a few years. I speak a little German, and plan on taking German as a minor in college because I wish to become fluent in the language. Anyhow, I just wanted to introduce myself - my name is Jenifer. I hope you find the egg decorating information helpful, or at least interesting!)
