Just tried these, and they are fabulously rich! Thought I would share them with all of you.
Cherry Chocolate Chunk Cookies
1/2 cup butter, softened
3/4 cup sugar
1 egg
2 1/2 Tbsp milk
1/2 tsp vanilla extract
1 cup all-purpose flour
6 Tbsp baking cocoa
1/4 tsp baking soda
1/4 tsp salt
1 cup semisweet chocolate chunks
1/2 cup dried cherries
In a small mixing bowl, cream butter and sugar. Beat in the egg, milk and vanilla. Combine the flour, cocoa, baking soda and salt; add to creamed mixture and mix well. Stir in chocolate and cherries
Drop by rounded tablespoonfuls approx. 2 inches apart onto baking sheets lightly coated with nonstick cooking spray (or parchment paper). Bake at 350 degrees fo 12-14 minutes or until firm. Cool for 1 minute before removing to a wire rack. Cool completely before eating, as chocolate will be melted and cause the cookies to fall apart. Yield: 20 cookies
