Well, a theoxenia is an ancient type of ritual, where the gods are invited to a formal dinner where they get served human foods (rather than the normal type of sacrifice, where it's mostly about the smoke/scent rather than the food itself). They were held for many different gods and heroes all over the place. However, at Delphi in particular there was a whole month called Theoxenios, in which they believe there was a big Theoxenia festival for Apollon. I modified that to include some of the other gods of Delphi, who are also my personal gods.
I have changed around several dates though
I think the most important thing is, once you have set the dates, to stick to them, and to over time develop a fixed calendar, where you start creating a tradition. In other words, not to just move them around constantly to make things more convenient (not that I'm suggesting you're doing that, but sometimes it's tempting). Of course, in the first few years especially, you may make a bunch of changes as you find out what works and what doesn't, refine the calendar, etc. I hope you have fun with this and it sounds like you're creating something really great!
