Gluten Report

After one month of being gluten-free, and then testing gluten again for the past couple of days, I've come to the following conclusions:
- Being gluten-free makes me feel pretty great in terms of managing energy-levels and eating nutritious foods. I crave sweets less & don't get so hungry in the middle of the day.
- Eating little bits of gluten doesn't seem to make too much difference to my health.
- Eating lots of gluten gives me a stomachache, a headache, and makes me sluggish.
- My eczema seems to be better when not eating gluten, and flares up when I do eat it.
- My joints may dislike gluten. It seems reasonably likely, given the above, and given that my joints have been feeling mostly better, but it's tricky to tell because there are lots of other factors.
So my plan is to modify my gluten-free diet to be a low-gluten diet; I'm not going to worry about small amounts in sauces and so forth, and I'm going to have delicious floury things, such as cake, occasionally but not frequently. We'll see how this works out in practice but that's my plan.
