I was looking around for a green tea cake recipe and I stumbled upon a green tea orange mousse cake by Monica Glass (aka
Pastry Princess). It looked absolutely elegant and divine. As I was doing my 8 mile run yesterday, I was thinking of ways to use my very tart blackcurrant juice and then it dawned upon me that perhaps I can marry my 2 favorite flavors together. I guess given the color of the blackcurrant, my cake does not exactly look elegant. It looks more like
Shrek in his royal outfit.
I modified the recipe by replacing orange juice with blackcuarrant juice and because I'm not a fan of buttercream, I didn't make the matcha buttercream which was part of the original recipe.
Verdict:
misawong , Trevor, Christine, and I decided that it's better to separate the 2 flavors, i.e., green tea chiffon with green tea mousse and blackcurrant mousse with a vanilla based chiffon. Both flavors were better when eaten separately, and only so-so when put together.
