Winter Warmies 1: Hot and Sour Soup

I always find myself gaining weight over winter because I tend to eat more and run less. So, I started experimenting with comforting and satisfying dishes that wouldn't go to your pouchie. Here's one of my favourites - hot and sour soup.

Serves 4
2 cups chicken stock, fat removed (if using canned stock, use 2 cans of lower sodium stock)
1 tbs miso paste
1/4 cup Korean chilli pepper paste
1/2 block silken toufu (about 200 g???), julienned
1/2 cup bamboo shoots, julienned
6 dried shitake mushrooms, soaked and julienned
1 tbs Chinese wine
1/4 tsp sugar
3-4 tbs black vinegar
ground white pepper
spring onion, chopped (for garnishing)
1 tbs oil
1 tbs cornflour, mixed with a little water

Put 1 tbs oil in pot / pan with the chilli and miso paste. Stir for about 1 minute until fragrant. Put in stock, wine, pepper, sugar and bring to boil. Add in mushrooms, toufu, and bamboo shoots. Simmer for 10 minutes. Add vinegar and cornflour just before serving.
Note: I personally do not add cornflour because I like to cook it in bulk and store it.

You may add prawns or chicken or pork into the soup as well.
