I'm making some homemade chicken soup for dinner tomorrow!
The best way is low and slow! So I've been letting everything simmer now for about 3hrs! I wanna let it go for at least one more hour to fully develop it's flavors.
It's a very basic, yet classic recipe with very few ingredients: Celery, carrots, onion, salt, pepper, and, of course, chicken.
I'm using a cornish hen because a normal sized chicken would just be too big for just Eric and me! XD
Once the stock has simmered long enough I'm going to strain it all so it's a nice clear broth. Then I'll chop up the veggies and add them back to the brooth. And of course I'll clean the meat off the hen and add that back. It could be eatten as is, but I'm a classic when it comes to chicken soup needing wide egg noodles!
I'll try to remember to take and post a pic of the finished dish...but no promises! lol
