I get them from various cookbooks or veganized versions of regular recipes. If your looking for a cookbook, Veganomicon is an excellent one. I have made around 10 things from this cookbook and ALL of them have been excellent. None were inedible.
Another place you might like is Delicious TV. You can also check and see if it airs on a local station near you :) and if not, there is plenty on the website. Also, don't forget, The Fat-Free Vegan. Click the blog, thats where all the goods are.
Not only are those bentos completely adorable, but the food looks SO yummy! You should post these to veganfoodpics!
How do you like "Skinny Bitch in the Kitch"? It seemed like a lot of "normal" recipes veganized, but I only glanced at it.
Edited to ask: are bentos something that have helped you with weight loss because they force smaller portions? I've been thinking of getting some with that in mind.
I've been doing Weight Watcher's Core plan since about October of 2005. One of the things that it focuses on is listening to your own body signals to discover when you are truly hungry and full.. I've found that Bento's are a great way to keep portion sizes pretty realistic. You can pack a lot of food into one little bento which is pretty surprising to most of my friends lol, but I have found when packing them, I normally eat much less and much healthier.
I've vowed to use bentos for lunch and dinner until I am at my goal weight. I use Sanario rice bowls for my breakfast cereals also. They hold about 1 serving of cold cereal. I don't measure hot cereals like oatmeal or cream of wheats.
I have quite a few Vegan cookbooks that I am reviewing at the moment, and this just happens to be one of them :) I have to say though, the SBin-theKitch enchilada recipe was fantastic!! Even my non-Veg*n family are asking for the recipe :)
