I'm making strong, enjoyable efforts to boost my health and vitality.
Rejuvenation.
Therefore, I'm eating increasing amounts of fresh vegetables.
For example, i buy mixed salad greens in bags, ready to eat. I'll eat almost all of one bag each day, adding canned tuna, grated cheese, and a salad dressing of my choice.

As to fruit, in general I tolerate canned or dried fruit better than I do fresh fruit.

So today I created a delicious dried fruit and mixed nut combination.

(1) Cherie's Tasty Trail Mix

Mix the following in desired proportions:

Dried dates, chopped
Dried banana slices
Dried cherries
Dried blueberries
Dried pineapple/mango pieces
Dried cranberry/strawberry pieces
Mixed nuts, roasted, UNsalted
I used cashews, almonds, cashews, filberts (hazelnuts), peanuts, Brazil nuts. (\I didn't use walnuts because they negatively affect me.
(Sunflower seeds, roasted and unsalted, would be nice, but this time I didn't add them.)

The following is a delicious salmon dish that I developed:

(2) Cherie's Mediterranean-style Salmon

1 lb. fresh salmon fillets, rinsed and dried.
1/2 cup white wine
1 clove garlic, minced
1/2 yellow onion, thinly sliced
Juice of one lemon
1 tsp. powdered tumeric (I bought mine in a deliciously-fragrant spice market in Kiryagat, Israel.)
1 tsp. dried oregano (I used Greek oregano, that I grew and dried)
1 tsp. paprika powder

Heat the oven to 375 degrees F.

While the oven is heating:

Spray a 9"x13" dish with Pam spray.
Place the salmon fillets evenly in the dish.
Pour in the wine.
Pour the lemon juice evenly over the salmon fillets.
Sprinkle the minced garlic evenly over the salmon fillets.
Place the onion slices evenly over the salmon fillets.
Sprinkle the tumeric, oregano and paprika evenly over the salmon fillets.

Do not cover the casserole.

Bake for about 30 minutes or until a fork inserted makes the salmon flake.
(Baste with juices about 15 minutes during the baking time.)

For lunch today, I dined on:
Cherie's Tasty Trail Mix as a fruit-and-nut "salad"
Steamed asparagus spears seasoned with melted butter with herbs
Cherie's Mediterranean-style Salmon
and delicious espresso "Breakfast Blend Coffee" made in my stove-top espresso "Vesuvius" coffee maker. The coffee is organically-grown, Fair Trade coffee.

When serving, spoon some juices from the pan over each salmon fillet.
