One of the hardest things to teach a new cook is how to not overcook fish.

Maria brought a plate back during lunch today and showed me that half the portion of halibut was going in the trash. She said the (little old) lady who ordered it had not wanted it wrapped up to go, had not wanted to substitute anything else, had not wanted to complain about it, but found it to be undercooked for her taste. Maria had looked at it and said yes, well, it was JUST opaque, but that it was certainly cooked (actually it was pearlescent and perfect).

The guest said it was too moist.

Too moist. The halibut was TOO moist. *laugh* Can't win for losing.
