RR the new guy is a pro. Good goddamn, what a joy to have this guy cooking for me. *cross fingers* He and his adorable zaftig wife have been in twice in two days! Last night she wanted to try the salmon chowder; tonight he wanted the prime rib. I am oddly flattered that he likes the food.
Saturday was actually pretty slow. Lunch was steady. RR said it was the busiest he's been so far. He only had time to do a couple hours' prep. *grin* He was pretty self-sufficient, though, on his third day. I am pleased. Tomorrow we shall see how fast he can go. There's a group of 450 at the Lodge and today they were all fed there. Tomorrow they won't be. Sous got last night off in exchange for D getting tonight off. Tomorrow sous will be off and we will be run over. Morituri te salutamus. Lucky sous. Actually, kind chef. I need to work him harder. It will be good for him to have a little competition.
