Jesus H. Christ, it's pouring like a bitch outside right now...yay for hurricanes!
well, week 1 of the extern is now over with, 17 more to go. it;s gotten progressively better with each day. the pastry sous chef, who i work with most of the time, is pretty awesome, but nothing compared to the chef. Ron (the sous chef) and i make same great things together, but they're nothing really special...i mean, they're not bad, just kind of ordinary...lots of layered mousse desserts, but the layers are just the mousse and roulade sponge cake...i mean, they taste great and all, but it's just not very exciting. but, it is only week 1, and it sounds like once the holidays get closer, we're going to do some cool things...like a gingerbread scene, where each of us gets to design and create a mini-scene or building that will then be incorporated into the whole design. THAT'LL be awesome.
whenever the chef's there (Chef Keith), it makes the day that much better, especially when we have time to talk a little about stuff. he's really excited to show me his style of piping and to teach me how to do it, so i can add it into my repetoir. just little things like that that he mentions and gets all exctided about when he's telling me about them gets me all excited about it. he's a CIA graduate (December '93, 5th baking and pastry class to graduate from the degree program), and loves telling me how it was back then, especially since the AOS Baking and Pastry program was still so new, so there have been A LOT of changes to it, and to the campus. he's really excited for me to go back for my second year and have all of the chef's he had when he was there. especially Chef Grueling (he teaches the chocolate/candy class). most of the 1st year baking chefs have only been there for under 5 years, so Chef Keith doesnt know about any of them. but, he is teaching me so much stuff just about the industry in general....real-life things that they dont teach you in school. it's awesome. like i said off the bat, it gets better everyday.
well, Hurricane Wilma is supposed to be heading our way on Monday...even if it doesnt hit us directly, we still have to worry about flooding (we're below sea level here, and surrounded by a butt-load of lakes). so, we'll see what happens...it'll be an adventure, if nothing else
