Hey, we are finally open on Wed nights

Our intrepid krewe at The Green Goddess has finally decided we have the power to go ahead & open on Wed nights. Of course, these gorgeous Autumn evenings are worth the extra hours because it's so splendid to savor them outside in our magical little alley, but mainly it reflects how together we are as a group of cooks, bartender & servers that we can finally add another day to the schedule. But we will be there rain or shine on Wed nights from now on.

For the longest time, we've needed Wed to prep, to write the new menu, to conduct epic wine tastings with our various wine reps to build our list, to clean & refurbish, to make lists for both the everyday things & lists for our dreams to feed upon. I kinda hate to let those nights turn into straight service bcuz my Wednesdays were really the place where I let us grow as a restaurant. Tasting & dreaming of faraway places & of our soulful place smack in the heart of the French Quarter, we formulated our barely controlled chaos into plate after plate after cocktail after weird & wonderful wine, all presented in a parade of our chiseled gastronomy gems.

The dreaming is like walking backward into a mirror, it reflects your hopes & sorrows with the energy that reality always fumbles away. It's a concentration of what is & what could be. For me to be able to hold back on service for 3 nights a week, when we were young & more precarious financially, made great sense. We eliminated a slew of potential slow nights, and lemme tell you nothing kills a small restaurant like having to endure a series of slow nights because you think you need to be open as much as possible. Slow nights in a little joint are the kiss of death, a silent persistent hemmorage of lost dollars. It's better to be closed than to have a weekly night that steadily slows sales, so just going Thur thru the weekend all the way to Sunday night at 11pm protected us from miserable nights. As a result, I also earned Green Goddess the rare privilege to dreamy dream to start the week, each Wednesday afternoon as the sky fell into darkness. For me, Wed nights have been a source for our bravura performances of derring-do the rest of the way each week.

So I want to keep mine intact, and continue to conduct tastings & make notes with my brilliant sous chef & bartender/brigand and decide the fate of our upcoming week as a restaurant. But we will be open for service, and in honor of my usual lust for discovering fine wines, I want to start a built-in wine tasting element to the menu. I haven't discussed the options thoroughly yet for a Wine & Wednesdays promotion yet, precisely, but there are several options that lead to a guest sampling various wines during a meal, and it does come out to costs after all. But I would so enjoy hosting a Beaujolais evening, or a Malvasija is Rolle is Vermentino is Pigato tasting, or any of the many, many other weekly wines themes that leap to mind, well; each week could be a different assemblage of awesomeness from Planet Vino. So we shall see just how much "Hump Day" Wine Party we can manage as we truck on into opening GG every Wed night from now on.
