Hello, it's me again

To all my friends in Louisiana I am glad you are doing well and you have been in my thoughts constantly, I am sorry I have not written or really called but my time has been a little taken away from me. The reason my time is gone is that I am getting ready for my Napa Rose tryout next wednesday. It comes down to be being between me and my best friend at work, so i am a little nervous and stressed about this. For the tryout i have to make a salad and two entrees, please let me know what you think of my plates:

Salad:
Frisee lettuce tossed with a pomegranate vinaigrette, with slices of avocado. served in an herb crusted lavash ring. around the plate will be 3 grilled shrimp that have been marinated in o.j. and the plate will be garnished with pomegranate seeds.

Fish:
This dish is a work in progress and I should have figured out tonight, I am using halibut and I really wanna make the flavor pop here, i will post this one when I am totally done with it.

Lamb:
Grilled lamb t-bones that I am going to baste with a rum sauce while they are grilling, served with an apple chutney on top. herb, pancetta & sun dried tomato roasted potatoes with a port wine sauce.
