So the other day, the paper featured blueberry recipes. At Publix, blueberries were $2.50 for a quart. Thus, I had to bake something.
The crust was simple: butter, sugar, egg, vanilla, and flour. Very easy to mix, but a pain in the ass to work with. The dough was very dry and wanted to crumble all over the place. Rolling it out was a battle of wills. I used whole wheat flour, as that's the only flour we had in the house. It came out ok, but it would be better with white flour. The crust was not flaky like pie crust; it was drier and rather crumbly.
The filling was super easy: sugar, cornstarch, lemon juice, and blueberries. Mix it all together over medium heat, and stir continuously until it boils and thickens. It didn't ooze all over the place when I sliced the Flat Pie, which was nice. Not too sweet, not too sour.
Even with the little bit of oddness that was the whole wheat crust, the Flat Pie still disappeared pretty quickly.
