Hey vegans!
First of all, I've been vegan for 10 years (just had my veganniversary). It's been a great 10 years and I've done a lot of cooking and a lot of learning. I'm a triathlete and even have a website called vegantriathlete.com, where I talk about my training etc. It's also mirrored to my lj account.
My situation is such that I'm in a tight financial position. In the past I've been so poor that I went on a juice fast for 3 weeks. That was intense! However, I don't want to do that again, so I'm allowing myself $25 for the next 3 weeks. I'm trying to eat all of the food that I have in my house right now. Luckily, I have a lot of rice and flour. I also have a lot of almond milk (a friend gave me a case of outdated almond milk bc she is freaked out my expired food, but i'm not!). I have lots of frozen berries and lots of flax (and access to flax - I have farmers as friends). So I'm actually starting out really well.
I'm thinking of making a whole list of the foods and then try to put together some sort of food plan. I make bread and have lots of flour so I'm going to bake a whole bunch of loaves this weekend. What I do is I bake them, slice them and freeze them to use as I go.
Anyway, I figured this might be a great community to share this project/experiment with. I wonder how little I can spend on food in the next month... or even the summer... or even the rest of the year! Would you all be cool if I posted it on here? Or even cross-posted some of the posts from my personal journal to here? I'm kind of stoked. :)
