Cheap Vegan Lasagna ish stuff

OK, so my husband is a freak about watching gourmet cooking shows.  They make me ravenous but we stay broke a good chunk of the time.  Well one of them had a tasty, pretty easy, and dirt cheap recipe.  They Called it vegetarian Lasagna

This THRILLS me. Because it's not only vegan, it's GLUTEN FREE! YAY!

YAY!!!! I didn't even consider that, but it is true. And trust me you will never miss the wheat in this recipe.

Mmm, that sounds yummy. I make a mean veggie lasagna, but have never tried it with polenta.
