I just cooked quite a bit of quinoa.  Does anyone know if it freezes well?  Also, how many days does cooked quinoa keep?

thanks!

this sounds lame, but how do you even cook quinoa? last time i made it, it was really gross.

well honestly this is the first time i've cooked it myself. first, make sure you rinse the quinoa really really well before cooking. after rinsing, i just boiled 3 cups of water and then put in 1 1/2 cups quinoa, covered, and let boil for about ten minutes or till tender and little "tails" come out. tasted good to me. i added some garlic and italian seasoning and diced onions.

It's a 2:1 ratio of water to quinoa. I always put the quinoa in the pot with the water, cover it bring it to a boil and then reduce it to a simmer and cook until tender but not mushy. If there is to much liquid at the end and its soft enough I take the lid off and let the extra water evaporate off! I eat it with baked tofu and veggies, or I like to put soups or stews. I basically use it in place of rice...

it'll freeze okay, although it'll last in your fridge for a couple weeks i bet. i cooked a ton of it once for dishes i didnt end up making for almost 2 wks and it was fine :)
