The original recipe calls for ghee, of course, which wasn't on hand. Next time, will try with less sugar, and eventually will experiment with garlic, coriander, etc.
Naan
1 cup plus 4 tbsp milk, divided
2 tbsp sugar
1 packet yeast
4 cups flour
1 tbsp gluten
1 tsp baking powder
½ tsp salt
1 stick melted butter, divided
8 oz. Greek yogurt, plain
1 egg, beaten
Warm 1 cup of the milk. Add the sugar and yeast to the warm milk, stir it up, and let it sit until foamy.
Meanwhile, mix all the dry ingredients in one bowl. In a small bowl, mix together the remaining 4 tbsp milk, 2 tbsp melted butter, the yogurt and the egg.
Make an indentation in the dry ingredients and add the yeast mixture. Stir, then add the additional wet ingredients while stirring. At some point you’ll have to get in there with your hands to finish mixing.
Knead for about 8 minutes, then form into a ball and place in a buttered bowl. Roll the dough in the butter. Cover with a cloth and allow to rise about one hour.
Punch down, knead another five minutes or so, divide into 8 portions, and form the portions into balls. Place on a tray and cover. Allow to rise another hour.
Roll out dough into ovals, and brush with the remaining melted butter. Cook in a 400 degree oven about 3 minutes to a side. Watch carefully and don’t overcook it. In the Foreman 360, cook on high five minutes to a side, using the pizza pan.
