Fire Cider

Because I haven't tossed out a recipe out there in a while, I present:

Dark Secret Fire Cider*
1 quart cider vinegar
5 dried cayenne peppers
2 cloves garlic
1 chunk ginger
1 spoonful horseradish
1/4 white onion
tumeric
rosemary
sage
thyme
oregano
*

In a pot, heat up the vinegar. I advise making multiple quarts at a time, but that's me. Add, immediately, peppers, garlic, ginger, horseradish, onion. Stir until pungent. Add at least a generous spoonful of each spice. Decant into quart sized mason jars, with solid items intact. If you have metal lids, protect them with wax paper.

Each morning (or evening, or both) heat the jar in a pot of warm water for three to five days.

Put everything but the vinegar in a mason jar. Pour vinegar over. Leave in a cool dry place, shaking daily, for two months. If you have metal lids, protect them with wax paper.

Fire Cider is so-called because it's hot like fire. It's good medicine - clears the sinuses, wards off headaches, and boosts the immune system. Take a spoonful (or shot) daily. Add it for flavor (without salt or filler) to soups, marinades, and rice. Mix it with whiskey or a Bloody Mary for an extra kick.

*So-called because of a facebook conversation where I offered a friend Fire Cider in five days. He wanted to know what dark secrets I knew to make this happen.
