Stovetop Popcorn

3 tbsp canola oil
1/3 cup of popcorn kernels

Pour oil into the bottom of a 3 qt saucepan with lid. Add popcorn. Prop lid so that a little air can get into the pot, but it is mostly covered. (This is key.) Put over medium heat. When popcorn stops popping, remove from heat. Pour into a bowl. Add topping of choice.

The lid part here is key. My mother once had the lid firmly on the saucepan and lost her eyebrows to that mistake.

Toppings are only limited to imagination. I prefer salty popcorn, but I've been known to toss chili powder and garlic on it. My brother likes it sweet and will add cinnamon sugar. It's also a significantly cheaper alternative to bagged popcorn and, depending on your oil (note: you need an oil with a high smoking point) and topping, healthier.
