Cucumber Salsa
1 cup Cucumbers (peeled, seeded, ¼ diced)
2 cups Tomatoes (Roma, ¼ diced)
¾ cups Red Onions (¼ diced)
1 Tbs. Cilantro (cleaned, stemmed, chopped)
¼ cup Yellow Bell Peppers (¼ diced)
½ cup Black Beans (canned, drained)
1 tsp. Ginger (fresh)
1 tsp. Garlic (fresh minced)
1 Tbs. Sugar
2 tsp. White Wine
1/8 cup Sweet Chili Sauce
2½ Tbs. Chili Oil

1. Mix all ingredients together, except ginger, garlic, garlic oil, sugar, white wine, sweet Chili sauce and chili oil.
1. Heat oil in saucepan add ginger and garlic. Sauté' until golden brown
2. Add sugar and caramelize.
3. Deglaze the pan with white wine and reduce heat.
4. Add sweet chili sauce and chili oil.
5. Add remaining ingredients and mix well.
