Started eating before I stopped to take a picture. It was almost too good to stop eating to get up to get the camera =)



Kathryn and I made homemade crab cakes with fresh crab meat she brought down from Maine. They came out amazing. I made the crab cakes, kathryn made the spicy sauce. The spicy sauce was the perfect condiment for the crab cakes, which had a terrific flavor, and held together quiet well without being overly bready. There was just enough bread crumbs to give it some structure and a creamy texture. The panko crumbs were great, first time I used them. Unfortunately we didn't take exact measurements of anything, but here is the general idea. All of the measurements are approximate.

Crab cakes (made four patties)
8 oz fresh lump crab meat
1/3 cup Italian seasoned panko bread crumbs
3/4 of one lightly beaten egg
3 tbs minced scallion (green parts)
3 tbs minced bell pepper
1/4 cup mayo
2 tsp Old Bay seasoning
1 tbs Worcestershire sauce
salt and pepper

Mixed all the ingredients together. Had to fiddle back and forth a bit with the mayo, egg and bread crumbs until it seemed a god consistency to make the patties. Formed in 4 palm sized patties. Lightly breaded the outside of each patty with more bread crumb. Saute in olive oil until golden brown on both sides.

Ketchup
Sweet pickle relish
Horseradish sauce (not horseradish, the creamy stuff)
Smoked Chipotle tabasco sauce
