this was my dinner tonight. it was AWESOME
1 zucchini
2-3 oz gruyere
tbsp or two EVOO
~1/2 cup pecan pieces
sprinkling of garlic powder, salt
take the zucchini and cut into slices ~2-4 mm thick. toss with olive oil, sprinkle with salt/pepper/garlic. spread evenly (without overlap) on foil-covered cookie sheet. bake at 425 for around 5 minutes. take out, flip with spatula, place back in oven for another 5ish minutes. use cheese slicer thingy to cut really thin slices of gruyere. take zucchini out again, push slices together with spatula, layer zucchini slices with gruyere and pecan bits. stick back in oven just long enough for the cheese to get a little melty and bubbly. enjoy!
