experimenting in the kitchen: amaranth?

something i've never tried before and that turned out AWESOME:

heat a DRY skillet with a glass lid to high. you'll know it's hot enough when you flick a little water into it and it slides around and dances. add about a wooden spoonful of amaranth, replace lid, slide skillet back and forth over hot burner vigorously until most of the popping stops. pour popped amaranth into bowl, repeat as desired. (pops very quickly! you're almost guaranteed to burn a little of it, but don't get discouraged.)

while skillet is hot, reduce heat to medium, add a little olive oil, throw in a yellow bell pepper (chopped into pieces) and a half a bunch of scallions (also chopped into pieces). throw in 2-3 cloves of garlic (chopped or pressed). cover with lid, cook ~5ish minutes. add two tilapia fillets, pre-thawed, and sprinkle with black pepper. add more olive oil as needed. cook on medium until fish is done, chop into roughly bite-sized pieces. sprinkle with popped amaranth and salt, revel in deliciousness.

the amaranth sticks to everything and makes it taste like the fish was breaded in popcorn! it's pretty awesome. try it, you'll like it
