Breaking a new trail

Yesterday I went out and skied on the trail that Bob made. He had to snowshoe first and then come back and get his skis to make it a ski trail. It's a fun little trail but it took so much energy for him to make it just that far. So today I went out on my skis and strapped my snowshoes to my backpack. Yup it's really awesome. sorry you can't be here you'd have so much fun. Snowshoeing is really hard right now because of how much snow there is. every time you take a step you have to lift your foot up over the hight of your knee just to break free of the snow and take another step! crazy! But lots of fun.
Bob finished the trail yesterday so I'm going to go ski out to the meadow in a little bit.

The apple bread isn't terribly healthy because it is a sweet bread. It's more like cake but it's a yummy dessert and a good hiking snack.

4 to 5 apples (or however many you want really)
1 cup plain nonfat yogurt (the recipe says sour cream but I used yogurt and it was good)
2 cups sugar
1 cup vegetable shortening (soy butter for me!)
2and1/4 cups all purpose flour (if you use whole wheat flour sift it first)
1/2 tsp salt (generous)
1/2 tsp baking soda (generous)
1 tsp vanilla
(1/2 cup sugar and 1 tsp cinnamon mixed to sprinkle on apples and top... I used more cinnamon. you could probably leave this out all together if you felt like it)

- Preheat oven to 350
- Sift flour if needed
- Peal and slice apples. Chop about half of the apples to throw into batter. the sliced ones will go in the middle layer and on top.
- If you decide to sugar the apples, put the sliced apples into a small bowl and mix in most of the smaller amount of sugar mixed with cinnamon. Leave a little to sprinkle ontop
- Mix yogurt and sugar in large mixing bowl. melt soy butter and add to mix. add flour, salt, baking soda, and vanilla. mix well. Probably works better with an electric mixer.
- Add in chopped apples
- Grease pans (I had only one small little bread pan so I made one small loaf and some muffins.)
- Pour a layer of about an inch into the pan. Put some of the sliced apples on top of this layer and then add more batter. you can layer as much or as little as you want but try not to fill the pan more than half way. Same with muffin tins.
- Put them in the oven and bake for about an hour and fifteen minutes. Muffins take less time so check them. Your cakes and bread may look a little caved in from the weight of the apples but they will taste just as good either way!
