Beer Bread fun this weekend!
First loaf was the Un-rye Beer Bread and it is GREAT. The Beer I used was Newcastle Brown Ale. Otherwise, I pretty much stuck with the recipe as it was written. I LOVE THIS BREAD. I'm not a big caraway seed fan, but I think I liked it because it wasn't paired with rye flour and because the sweetness of the onions. It all complemented nicely. I'm not sure how much the beer played in the taste of the bread, but I know it didn't harm it. brophy didn't like the bread because he doesn't like the caraway. OK - more for me.

The second bread was the Herbed Beer Bread. The beer I used with this was the Leffe Blonde ale. Since this was more of a play with your ingredients recipe, I used the following fresh herbs. Parsley (1/2 cup), Sage (1 tsp) and Rosemary (1 Tbsp). For the cheese, instead of using just asiago, I used a blend of asiago, parmesan and romano. brophy and I both love the rosemary bread you can get at Macaroni Grill, so that was kind of the flavor i was going for. I succeeded. This bread will be excellent dipped in seasoned olive oil. brophy did like this bread.

You'll notice that this bread isn't as tall as the other bread. Its not because the recipe changed, its because the pan changed. That was because each was cooked in different pans. The un-rye bread was cooked in a smaller loaf pan and therefore is taller. The herbed bread was cooked in one that is much wider to accomodate a larger amount of dough. Since I knew we wouldn't be making sandwiches out of the herbed bread, I decided to use that pan. Besides the smaller one was already in the oven with the other bread.
This is great fun, though the organized cook in me is just frustrated to death using an ingredient I haven't a CLUE of its taste or flavor. The adventurous cook in me is going, ok, let's play with beer. I am hoping I'm making good choices. Though I am beginning to wonder if I might as well used Bud.
