So I was in the mood for Tofu tonight and remembered hearing about Honey Tofu on the podcast "More Hip than Hippie" (See links on left). So, I took that as my inspiration and changed it around. (imagine that).
Lemon Honey Tofu Stirfry
Ingredients
1 block of extra-firm tofu, 1 inch cubes
Olive Oil for pan
1 cup Yellow Squash, sliced
1 cup Zucchini, sliced
1 cup Red Pepper, sliced
1 lemon,squeezed for juice
1/8 tsp Curry Powder
2 tbsp Honey
2 tbsp Tamari (soy sauce)
2 tsp salt
Directions
In a small bowl mix the honey, lemon and curry powder. Set aside.
Get a cast iron pan hot with enough olive oil to coat the bottom.
Add the vegetables salt to taste and cook to desired tenderness. (Salt will bring out the moisture in the veggies and enhance the sweetness of the honey)
Remove the vegetables from the pan.
Add the cubes of tofu to the hot oil.
Let the tofu cook for a while and get crispy on each side, turn it gently.
When the tofu is cooked, pour about 2 tablespoons of honey mixture (+or-) over the tofu.
Note that the honey will thin out and melt.
Next, pour about 1-2 tablespoons of Tamari over the tofu and honey.
You'll notice everything sizzling and splattering - so be careful.
Add the vegetables back to the pan
Turn the tofu and vegetables gently to completely coat.
Let the tofu and vegetables cook for a bit, until it gets to the texture you are happy with.
