Recipe: Fennel Spice Rub

OH MY - I haven't posted this one.  THIS ONE IS GREAT!!!!!!!!!!!!  It is a must have spice rub mix in your pantry.

Fennel Spice Rub

Ingredients

(Makes about 1-1/4 cups)

1 cup fennel seeds

3 tablespoons coriander seeds

2 tablespoons white peppercorns

3 tablespoons kosher salt

Directions

Put the fennel seeds, coriander seeds, and peppercorns in a heavy pan over medium heat. Watch carefully, tossing frequently so the seeds toast evenly. When light brown and fragrant, pour the seeds onto a plate to cool. They must be cool before grinding, or they will gum up the blades.

Pour the seeds into a blender and add the salt. Blend to a fine powder, shaking the blender occasionally to redistribute the seeds. Store in a tightly sealed glass jar in a cool, dry place, or freeze.

How I change the recipe
I won't ever change a thing to this recipe.  It is perfection.  If you must mess with pefection, you could add more chili pepper flakes to give it a bit more kick.  But that is the ONLY suggestion I would consider.

Well, I do double or triple batches when I do this.  I make some for the friends that clamor for it.

What do I use this with??
Add it to any tomato sauce or spaghetti sauce to give it an extra umph
Put on top of a chicken breast and let rest for 30 minutes as a rub.  Then grill or saute the chicken breast. 
Add to the top of a roasted turkey in a clay pot.  Mmmmmmmmm heaven.
Add to Ground Turkey Breast and salt and let sit overnight in the fridge.  Use this as added meat to a spaghetti sauce, meatballs, or as an italian breakfast sausage.
About the only meat I haven't tried this on is beef.

Lord only knows what else you could use this on.  It can only make things better.
