I tried this recipe last night with a little trepidation. Its low fat and lower in calories and usually, for Chili, I don't trust that too much. Also, it didn't use much in the way of tomato sauce so I thought it would be too dry. Well, its not soupy or stewy, but its DELICIOUS!!!
Turkey and Black Bean Chili
Serves 4
Weight Watchers Points - 4
Ingredients
2 Tsp Extra Virgin Olive Oil
1 Onion, Chopped
1 Green Bell Pepper, seeded and chopped
4 garlic cloves, minced
3/4 pound ground skinless turkey, turkey breast
1 (15 oz) can black beans, rinsed and drained
1 (14.5 oz) can Diced Tomatoes
1 Tbsp Chili Powder
2 Tsp Ground Cumin
1 Tsp Dried Oregano
1/2 Tsp salt
1/2 Cup Shredded Cheddar Cheese, Fat Free
1/4 Sour Cream, Fat Free
1/4 Cup Sliced Scallions
Jenny's Extra Additions
1 small chipotle pepper, seeded
1 tsp adobo sauce
1 small can of green chiles, chopped
These are of course optional
Directions
1. Heat oil in a large nonstick saucepan over medium-high heat. Add the onion, bell pepper, garlic, chipotle pepper and adobo sauce; cook, stirring occasionally, until softened, about 5 minutes.
2. Add the turkey and cook, breaking it apart with a wooden spoon, until no longer pink, about 3 minutes.
3. Stir in spices and let cook for about 1 minute. Add Tomato, and beans..
4. Reduce the heat and simmer, covered until vegetables are very tender, about 30 minutes.
5. Serve with the Cheese, Sour Cream, and Scallions
Servings Size: 1 Cup Chili plus 2 Tbsp with 1 Tbsp Sour Cream and 1 Tbsp of Scallions.

Chol - 30 mg; Sodium - 767; Carb - 25 gm; Fiber - 8 gm; Protein - 27 gm
Notes:
1 goofed and added only 1 Tsp of the Chili Powder, which in the end, may have been a good thing since I added the Chipotle pepper and Adobo Sauce. If you want more chili powder, then you may want to omit the Chipotle and Adobo Sauce.
I also replaced the sour cream with Fage 0% Complete Yogurt. It is a wonderful replacement.
