There is a cake in my head that is kinda like a fruit cake but with no fruit, and kinda like nigella lawson's stem ginger gingerbread cake: all brown sugar and spices. This isn't that cake at all, but I really like the texture & the fact that even though I was too lazy to beat anything it still came out fluffy and not particularly crumbly.
You should know I never measure anything and just work off the fact that I know around about what the consistency of cake batter is. Also I made this last night so conceivably am remembering slightly wrong too. All measurements, therefore, are "about".
3 cups white self raising
2 tsp each cinnamon, ginger
1 tsp each ground cloves, mixed spice, allspice (i know but i couldn't find any nutmeg)
1.5 cups vanilla sugar (we have no brown sugar; that was the first problem)
& stir
Add
1 cup vegetable oil
few drops orange oil
small splash vanilla essence
& stir
then add enough milk. another slosh of vegetable oil, even, if you're putting in lots of milk. I probably added three quarters of a cup.
into a cake tin - i used a square loose bottomed one - and into the oven. It didn't actually brown very much on top. Maybe a lack of butter? Maybe the temp should have been higher? It's a gas oven, the temp is basically either "not very hot" or "really very hot". Anyway, when you can smell cake from the lounge room, it's done. I put lemon icing on the top because we happened to have a peeled lemon in the fridge and it needed to be used.
Is slightly bland, but certainly succeeds in being the kind of cake I can eat all day. Which is what I was after, so success!
