According to the mishna four different laws apply to sales:
if one sells wheat as good and it turns out to be bad, the buyer
may withdraw; if one sells wheat as bad and it turns out to be good,
the seller may withdraw; if the description was accurate neither
may withdraw; and if flour is sold as dark and is white, or wood
is sold as olive and is sycamore, or liquid is sold as wine and is
vinegar, or the reverse of any of these, then either may withdraw.
(83b)
There appears to be no implicit value of white flour over dark or
wine over vinegar, or those sales would be covered by one of the
first two rules rather than "both may withdraw". Or so I infer, anyway.
(The g'mara clarifies that "the buyer may withdraw" means "and the
seller may not", and vice-versa.)
