I think I'm gaining weight just by reading your recipes. I've already been pondering where I can procure a duck, and now I want to try making crepes. This would be a great one for when family is visiting.

It's a day late, but I just remembered this one. It's essentially the Albers Cornmeal corn bread recipe that you'll find on the back of the box, but with a kick. Ingredients like sugar, chilis and cheese can be adjusted to taste.
1 cup cornmeal 1 cup flour 1/4 - 1/2 cup sugar 1 Tbsp baking powder 1 tsp salt 1 cup milk 1/3 cup vegetable oil 1 lg egg 1-2 cups shredded cheese (cheddar or cheddar/jack mix work nice) 1 4oz can diced green chilis, drained
Mix cornmeal, flour, sugar, baking powder and salt in a bowl. Add milk, oil, and egg and mix well. Stir in cheese and chilis. I don't usually add the whole can of chilis, but you can.
Grease a 9 inch square baking dish and pour in the batter. Bake at 400F for about 25 minutes, or until golden on top. Let it cool slightly before cutting, or else it crumbles.
This can also be made into muffins, but the baking time will need to be adjusted.

Cornbread... can't go wrong with cornbread, especially as the weather cools down. This looks really good. I have some Hatch chilies sitting in the back of my freezer. This would be a very yummy way to use up a couple.
