Kensei Muguruma
The Vizard has become a really good friend to Galatea in a short period of time. She thinks he's got a good sense of humor, can put up with some of her teasing and mothering, and generally seems like another good level headed warrior around. These are bonus points to her. More importantly, the two have common ground -- he's a hybrid, too and so is she, both warriors who departed for whom they fought for. Galatea can respect this.
Dante
Another hybrid, very close to what she is, even. He seems very brash, dumb, and impulsive, all the things to drive her up a wall, right? Kind of. Galatea offered to help track his twin brother, which she was unable to do so, due to Vergil being incapacitated and then some. But she got the feeling from him he was associating her with something or someone familiar. It's actually made her feel very guilty and daresay pity him. As a result, she treats him like any other kid around here: a stern, but gentle mother hen. She does mother hen him, which will probably come back to haunt her, considering she's like another Trish floating around here.
Aizen Sōsuke
Hey, he's gone out of his way to help her after Galatea said she was blind. That makes him a-okay, for now. Another guy who seems like he knows what he's doing. But I promise you, if these two ever get near each other, Galatea's going to be feeling to the contrary. WHOOPS?
Hope
His name fits him, Galatea thinks. Also: CHILDREN EVERYWHERE. She's definitely very concerned about his safety and well-being, even down to if he takes care of himself, after he was so restless from Lighting's rescue. She doesn't think his very perky disposition is a bad thing, matter of fact, she likes it. He's a good kid to her.
Azula
Azula reminds Galatea of what the Organization and conflict in a whole do to children, let alone girls who come in as warriors. It's disdainfully pitiful to her, and she believes this girl is on a slow decent to either madness or death shortly. Between her and Dante, she'll make great attempts to go out of her way and watch over her, because of the way Azula pushes herself. And she has enough stubbornness, despite lacking some general patience. However, no matter how annoyed or how much Galatea wants to smack her, she'll never act out on it. Seems like another girl and warrior about who needs to be pulled back down to earth. EXPECT HER TO MOTHER.
