Nothing beats a couple of eggsses so fresh they've still got the feathers on them. ^_^

You cook them first, of course. In fact, put two eggs in a saucepan of cold water just deep enough that it covers them, bring this to the boil, and from when it starts bubbling cook for 4 minutes for a soft egg, and slightly longer for a hard one. I reccomend the slightly longer. Then retrieve the eggs, take off the shell (or eat that too, if you particularly want to. Actually no, don't) and put everything else in a bowl at least as big as a breakfast bowl. Mash it all up into whatever size chunks you fancy, and add some salad cream (tastes better than mayonnaise, and it's healthier too!) and a dash of fresh pepper (but not too much). Mix it all up and serve between two slices of bread. You can add cucumber, tomatoes and lettuce too, or whatever you like.
