My Experience: I love posole/pozole and often order it in restaurants, too. I've spent some time in Hopi communities and a version of this is served throughout the dance days, a very mild version with mutton and served with bread called "stew." After vacationing in Santa Fe I brought home a package of dried hominy and planned ahead and made posole with that, and it was so much better than the canned hominy that is easier to get locally...then I found this new recipe that suggests draining, drying, and toasting the canned hominy. It came out great! Even though I forgot to take a picture of the roasting process....
