pork butt help needed.... being experimental is a pain!

So... I have a pork butt roast. I seared it with smoky salt, ginger/garlic paste, and black and red pepper, and put it in the crockpot with a cup of spicy apple cider and an onion and a granny smith apple.

My original idea was a stew with sweet potatos and carrots and apples and the roast. The roast takes up rather a lot of room in the crockpot.

Maybe should I roast the sweet potatoes apples and carrots separately in the oven, or would it be better if I added them to the roast now.

It's on high for the next hr, then will turn to low overnight.

I don't want the veggies overcooked, and I don't want the roast soupy, unless it becomes a stew. I am supposed to be taking all this stuff to an event tomorrow. Help!

Also, what do I do about the string on the roast, cut it off before serving? Suggestions?I'm cooking right now so help would be lovely
