is it still a bread if it's full of that much nom? its almost a cake!
This was an interesting experiment because I ran out of rice flour so I turned a cup or so of oatmeal into "flour" in the food processor.
1 stick butter
3 way overripe bananas
2 eggs
2 cups flour- I used rice flour and the oat "flour"
1 cup sugar- half brown and half white
2 tsp baking powder
1.5 tsp vanilla
1 cup pecans- semi-ground- sort of fine chop almost powdered
1/2 tsp cinnamon
1/4 tsp nutmeg
1 cup dark choc chips (I used Ghirardelli)
cream the butter and the sugar
add eggs, vanilla, bananas and beat till all blended
mix the flour and spices and the baking powder in a bowl- add and mix till all dry ing are moist
add pecans and chips and mix til well incorporated
grease bread pan. Bake at 350 for an hr (poss a little more depending on your oven) or until if you stick a fork in it it is done and the top is browned.
