Chicken Caserole

MM. I love this dish. It's cheap, easy, yummy and very filling.

2 packages of thin cut chicken breast cutlets (You can buy regular chicken breasts and cut them yourself too)
1 box stovetop stuffing mix
1 can italian style diced tomatoes
1 box frozen spinach (or one bag fresh spinach- wilted)
1 bag italian style cheese

~ cook stuffing according to mixture (I typically use chicken broth instead of water, but that's just my preference). I also like to use just a *little* less than called for in the recipe. You want it to be a little on the dry side.
~ thaw or wilt the spinach and make sure you press as much liquid out as possible
~ Once those two ingredients are cooked, pour them into a mixing bowl and add the tomatoes (press some of the excess liquid out of this as well). Mix gently together and set aside.
~ layer half the chicken breasts into a greased casserole dish, and then pour on half of the stuffing mixture. Top with the cheese.
~add another layer of chicken and the rest of the spinach mix. Again top with cheese.

Cook in a preheated 350 degree oven for 40 minutes and enjoy!

(if you want to be fancy you can thinly slice a tomato and layer those slices on top instead of the cheese)
