So the days are getting warmer! yay for an unusually warm springs.
So in honor of the weather, today I broke out my two favorite warm weather staple recipes: Mango Salsa and my Peach Drink.
Mango Salsa:
4 ripe mangos peeled and diced
4 roma tomatoes diced
1 bunch cilantro rough chopped
1 bunch green onion chopped
1 jalapeno (/cayenne pepper) deseeded and minced
1 clove minced garlic
juice of 1/2 lemon (if it's a small lemon, or not very juicy, add a little of the juice from the other half as well. You want about 1/4 c)
1 tbs sugar
1 tsp pepper or to taste
1+ tsp salt to taste
Tips: You'll want to add enough salt at the end of mixing all ingredients together that it is just on the verge of being notably a little salty. As it sits, the salt will help to draw out the other flavors and it WILL mellow. I promise. For that same reason, if you are sensitive to spice, use only as much jalapeno as you are comfortable using. Just be aware that the salt and lemon juice will continue to draw and distribute the heat. So it might start off fine, but the spice level will increase a little as it sits.
Peach drink:
1 bottle wine (white/pink/sangria/moscato/yougettheidea)
1 bag frozen peaches
peach schnapps to taste
1 can/ or most of a bottle of sprite (I use sprite zero)
you can also add a can of frozen peach daiquiri mix if you'd like.
tip: you can also do this recipe using frozen strawberries and strawberry rum.
