Clean apartment. Beef stew cooking. It just sucks that I have to go to work tomorrow.
Beef Stew
1pgk stew cut beef
1pgk stew cut lamb. If you dont like lamb, just use another small pkg of beef, but I think the lamb provides a really interesting depth of flavor.
1 cup flour (seasoned with s and p)
1/2 stick butter
1 med onion
1 cup red wine
1 cup beef broth
1/2 bag of frozen vegetables (peas, carrots, corn)
1 large can crushed tomatos
1 large can diced tomatos
1 small can diced italian style tomatoes
2 bay leaves
1 clove garlic, diced (or tsp minced garlic)
~season flour with s and p to taste. toss the meat in and shake until well coated. Put into a colander to shake the excess flour off.
~melt 1/2 stick of butter into a heavy bottom stew pot (I use a dutch oven). brown off all the meat and take out of the pot.
~dice the onion and throw in to the pot with wine and let cook down for a few minutes. Scrape off all the little pieces stuck to the bottom from the meat.
~add the beef back to the pot along with the broth, tomatoes, garlic, bay leaves and frozen veggies.
~cook for at least 6 hrs on med-low heat. You want it to stay at a very low simmer at most.
~adjust seasoning as necessary toward the end of the cooking.
~make sure you stir every so often to make sure nothing sticks to the bottom.
