I am still keeping track of all our dinners, I just have failed to post publicly. I am going to try to catch up. Here's the past couple of weeks:

09/11/10: Bow-tie pasta with red sauce, green salad, and garlic-Parmesan bread
09/10/10: Burritos with black beans, bell peppers, and onions and tomato rice
09/09/10: Summer squash and tomato risotto with fresh basil and green salad
09/08/10: Leftover Lentil Minestrone and roasted potatoes, onions, and garlic with thyme, green salad
09/07/10: Lentil Minestrone, roasted Brussels sprouts, and garlic-Parmesan bread
09/06/10: Fresh tomato-basil soup, corn on the cob, roasted cauliflower, green salad, and sourdough bread
09/05/10: Potato-Leek-and veggie bacon casserole and kale chips
09/04/10: Dinner out
09/03/10: Tomato-Cheddar soup, garlic Parmesan toasts, and Brussels sprouts
09/02/10: Leftovers (school meeting)
09/01/10: Southwestern stew with corn tortillas, roasted cauliflower, and kale chips. Stew was a new to me recipe from 1,000 Vegetarian Recipes. We all liked it a lot.
08/31/10: Corn on the cob, fresh tomatoes and basil with olive oil and vinegar on toast, veggie buffalo wings, green salad
08/30/10: Pasta country style (leeks, zucchini, celery, carrots, and onions with swiss and Parmesan cheese) and green salad
