What to do with a turkey carcass

I hate not using such a valuable leftover.  I truly do.

Turkey Tortilla Soup

Take 1/3 of the carcass of a 12-14 lb roasted turkey.  Preferably with some meat still on the bone.

Boil in 4 cups water for 1 hr.

Take the carcass out of the water, let cool, and shred the meat from the bone.

Put 1/2 cup pre-soaked black beans into the broth, season with Bell's seasoning, Old Bay seasoning, garlic powder, onion powder, and red pepper flakes.  Boil for 1 hour.

In the meantime, dice 1 onion and cook in a little olive oil until soft and translucent.

At this point check the level of the liquid.  You're about to add quite a lot, so you may want to take some of the turkey & bean broth out for future use.  I ended up pulling out almost three cups.

Add the turkey meat back to the pot.  Add the onions, one can of green enchilada sauce, one can of red enchilada sauce, one can of Ro-tel tomatoes and peppers.  Add salt, pepper and soy sauce to taste.

Once it all comes back to a boil, add 1/2 bag frozen corn kernels.

Once it's all hot. again whisk 2T of corn starch with 1/2 cup of the reserved turkey & bean broth and add to the pot.  Turn off the heat.  If it's not spicy enough, add Tabasco or some other pepper condiment until it's as fiery as you like.

Serve with tortilla chips, at least.
