Awesome ginger cookies

3/4 cup butter or margarine
1 cup sugar
1 egg
1/4 cup molasses
1 piece of young ginger the size of your thumb, grated finely (or ground ginger)
1/2 cup diced candied ginger

2 1/2 cups flour (white or half white half whole wheat)
1 1/2 tsp baking soda
1 tsp ground cloves
1 tsp cinnamon

Cinnamon sugar for rolling the cookies in...maybe 1/4 cup white sugar and a teaspoon cinnamon

Turn on the oven to 350, lightly grease the cookie sheet
Soften the butter, add sugar, egg, molasses, ginger...beat till fluffy
Separately mix the flour, baking soda, spices. Add to butter mixture and stir in. Should be a stiff dough.
Roll into balls, roll in sugar.
Bake till barely brown, maybe 11 minutes. Let sit one minute, then remove from cookie sheet.

I used mild flavored molasses and brown sugar instead of white sugar. They turned out great.
