NBPM - Day 3

Sundays. I love them.

We went to church this morning and heard a great sermon about Phillipians 4:4-9 . Good word. Something that I needed to hear, when I needed to hear it. God's awesome like that. We had lunch with two other families, afterwards. It' was a lovely time.

I had a (seven bottle of wine) book club meeting tonight. We just finished Ender's Game (my synopsis is that it's a boy book. Lots of battles and strategies, light on relationships and emotions). We always have fun, though, no matter what book we read.

Funniest thing that happened today? Ethan was hanging out with one of his friends, and was supposed to be home at 5:00. At 4:59, he calls.

Ethan. Hey, Mom.

Carrie. What's up, buttercup?

Ethan. Nothing. But can I go wash pigs with Sadie and her dad?

Carrie. ...

Ethan. Mom?

Carrie. Yes?

Ethan. Can I go wash pigs?

Carrie. (wonders if this is a euphemism for something) I ...guess?

Ethan. Thanks. I'll be home at seven.

I cannot even imagine a scenario in which I would ever find myself with a need to wash a pig. Ever.

Lastly, I give you my recipe for those biscuits I was telling you about, yesterday. The aren't healthy by any stretch of the imagination, but they are GOOD. And everything in moderation, folks.

Except for heroin. Or Apartheid.

Carrie's Best Ever Biscuits
ingredients
3 cups all-purpose flour
1 tablespoon baking powder*
3 tablespoons sugar
1 teaspoon salt
3/4 teaspoon cream of tartar*
3/4 cup butter
1 cup milk
(1/3 c butter, melted)

directions
1. Preheat oven to 450 degrees F. In a large bowl stir together the flour, baking powder, sugar, salt, and cream of tartar. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. (sometimes I use my fingers. It's just easier.) Make a well in the center of the flour mixture. Add milk all at once. Using a fork, stir just until moistened.
2. Turn dough out onto a lightly floured surface. Knead dough by folding and gently pressing dough for four to six strokes or just until dough holds together. Pat or lightly roll dough until 3/4 inch thick. Cut dough with a floured 2-1/2-inch biscuit cutter, re-rolling scraps as necessary. (Don't over handle the dough, it make for tough biscuits.
3. Brush tops of biscuits with melted butter.
3. Place biscuits 1 inch apart on an ungreased baking sheet. Bake for 10 to 14 minutes or until golden. Remove biscuits from baking sheet, brush again with melted butter and serve warm.
4. Makes 12 biscuits.
